    Boil and slice the potatoes

    Scrub the potatoes well and boil them in salted water until almost tender. Drain and slice. Cut the frankfurters into rounds.

    Layer the potatoes and sausage

    Grease a large baking dish with a little oil or butter and dust with breadcrumbs. Layer in the potato slices and sausage rounds. If you really can't be bothered layering, just mix the two together and tip them straight into the dish — that works just fine too.

    Make the egg mixture

    Whisk the eggs with the cream and season with salt, pepper, and mustard. You can stir in the finely grated cheese, or simply sprinkle it over the potatoes instead — whichever you prefer.

About this recipe

It's an easy, traditional recipe that doesn't take much effort — especially if you've got really good early-season potatoes that you cook right in their skins. As the "meaty" element, you can use smoked meat, sausage, or even kabanos. I went with our favorite Lidl frankfurters.
