Banana Roof with Baby Biscuits

Step-by-step method

Let’s cook

At a glance

This nostalgic dessert layers baby biscuits with creamy curd cheese, then folds up around a banana to form a roof before being crowned with melted dark chocolate. Most of the work involves patiently spreading cream and arranging biscuits in an alternating pattern, while the final chilling happens overnight in the fridge.

  1. 1/7

    Curd cheese cream

Tip the curd cheese into a dish and mix in sugar to taste along with the vanilla extract. Line a baking tray with foil.

  2. 2/7

    Arrange the biscuits

Lay the baby biscuits out on the foil. Place three of them in a row, on their sides, leaving two spare. Alternate them dark, light, dark.

  3. 3/7

    Spread with the cream

Spread half of the cream over the biscuits. It's a fiddly job - the biscuits tend to slide all over the place, so patience is key here.

About this recipe

This dessert is probably familiar to just about everyone. But do you actually have the recipe? I remember this "roof" from way back when I was a kid, and it used to show up pretty often whenever we had guests over. So, as an adult, I finally gave it a try in 2012. More footage from my kitchen archives.
