Homemade Almond Butter Cookies

At a glance

You're making delightful butter-almond cookies that are perfect for Easter celebrations — the kind that kids bring home in bags from door-to-door traditions. The dough comes together quickly, but it needs an hour in the fridge to firm up before you can cut it into festive shapes. The baking itself is fast (just 10-11 minutes), though you'll want to watch closely so the cookies turn golden but not brown.

About this recipe

At Easter, every boy who goes around for the traditional Easter whipping brings home a bag full of treats. This year, Toninka and I made homemade butter-almond cookies. You can cut the cookies out with metal or plastic cutters shaped like eggs or little animals, or simply use plain round cutters. Cookies made with a stamped cutter don't need any extra decorating, since they already have a pretty pattern pressed into them. The ones cut with a plain cutter can be decorated with royal icing, just like gingerbread, or topped with any icing you like — chocolate works beautifully too.
