Banana Roof with Baby Biscuits

·
8 servings
  1. Curd cheese cream

Tip the curd cheese into a dish and mix in sugar to taste along with the vanilla extract. Line a baking tray with foil.

  2. Arrange the biscuits

Lay the baby biscuits out on the foil. Place three of them in a row, on their sides, leaving two spare. Alternate them dark, light, dark.

  3. Spread with the cream

Spread half of the cream over the biscuits. It's a fiddly job - the biscuits tend to slide all over the place, so patience is key here.

  4. Layer the opposite way

On top of the spread cream, arrange a second row of biscuits, this time in the reverse order to the first row - light where there was dark, and dark where there was light.

  5. Add the rest of the cream and the banana

Add the rest of the cream and the banana

Spread over the remaining cream. This layer is easier to work with, since the biscuits are already stuck to the layer of cream below and won't slide around as much. Place a peeled banana right down the middle.

  6. Carefully fold into a roof shape

Carefully fold into a roof shape

Now shape the roof: gently lift the sides up along the banana and press them together against it.

  7. Pour over the chocolate

    Pour over the chocolate

Melt the chocolate with the butter in a small pan - no need for a water bath. Pour this mixture over the roof. Chill in the fridge, ideally until the next day.

  8. You're done!
