Onion and garlic
Peel the onion and cut it into small cubes. Peel the garlic, crush it with the side of a knife and chop it finely. Heat a little oil in a large pot and add the onion. Fry until the onion turns translucent, then add the garlic.

Thicken with flour if you like
If you like, at this stage you can add two tablespoons of flour to thicken the soup. However, the red lentils will thicken it plenty on their own, so this step is only for those who love an extra-thick soup. Just note that adding flour means the soup will no longer be gluten-free.

Tomato purée and red lentils
Add the tomato purée and the rinsed red lentils to the pot. Season with salt and pepper, and add a touch of sugar if you like. Stir well and cook over medium heat until the lentils are tender. Serve hot, topped with a dollop of sour cream if desired.
