Prepare the tin
Preheat your oven to 180°C. Line two baking trays with parchment paper. You'll need a cake tin 26 cm in diameter. Trace around the tin with a pencil onto the parchment paper, then flip the paper over so the pencil marks face down – you'll still be able to see the circle clearly through the paper.

Whip and fold
Beat the egg yolks with the sugar until pale and fluffy. Whip the egg whites into stiff peaks. Fold the flour into the yolk mixture, then very gently fold in the egg whites in stages. The batter should be smooth, with no lumps of flour or streaks of egg white.

Divide the batter and bake
Spread half the batter in the centre of one sheet of parchment, and the other half onto the second sheet. Spread it out to just past the traced circle, about 1.5 cm beyond the line. Bake one sponge at a time in the preheated oven until golden – this should take about 15 minutes each.
