At a glance
You're combining the festive flavors of St Nicholas Day into a delightful meringue loaf studded with Haribo bears, candied fruit, dark chocolate, and nuts. The tricky part is gently folding all the goodies into whipped egg whites without deflating them, but once you've got that down, baking is straightforward—then you'll finish with a rich chocolate glaze that sets beautifully in the fridge.
1/5
Whip stiff meringue
Put the egg whites into a stand mixer bowl fitted with the whisk attachment and beat until stiff. Add a pinch of salt and icing sugar, then whisk again until glossy and firm. While the meringue is whipping, melt the butter and let it cool slightly.

Fold in the bears
Gradually fold the flour and melted butter into the sweetened meringue, alternating between the two and mixing gently each time so the meringue doesn't lose too much volume. Finely chop the fruit, Haribo bears, chocolate and nuts, then fold them into the batter a little at a time.

Fill the moulds
