At a glance
You're making soft, fluffy bread rolls from scratch with a total time of about 1 hour and 45 minutes—mostly hands-off rising time. The main things to watch for are letting the dough rise properly after mixing, shaping the portions evenly, and giving the second rise a full hour for best results. Once they're golden brown from the oven, you can fill them with whatever you like, whether that's burger fixings, fried eggs and bacon, or anything else that sounds good.

Divide into portions
Turn the dough out onto a floured work surface and divide it into as many pieces as you want rolls, depending on the size you're after. For regular-sized rolls you'll get about 10 pieces, or 20 if you go smaller.

Let the balls of dough rise
Shape the dough into balls and press them down gently. Arrange them on a baking tray lined with parchment paper. Cover with a kitchen towel and leave to rise for about an hour.
