St Nicholas Haribo Bear Meringue Loaf (or Any-Occasion Treat)

  1. Whip stiff meringue

    Whip stiff meringue

    Put the egg whites into a stand mixer bowl fitted with the whisk attachment and beat until stiff. Add a pinch of salt and icing sugar, then whisk again until glossy and firm. While the meringue is whipping, melt the butter and let it cool slightly.

  2. Fold in the bears

    Fold in the bears

    Gradually fold the flour and melted butter into the sweetened meringue, alternating between the two and mixing gently each time so the meringue doesn't lose too much volume. Finely chop the fruit, Haribo bears, chocolate and nuts, then fold them into the batter a little at a time.

  3. Fill the moulds

    Rinse silicone bear-shaped moulds with cold water, then pour in the batter. Bake in an oven preheated to 160°C for 25 minutes.

  4. Add the glaze

    Add the glaze

    Turn the bears out and let them cool completely before glazing. To make the glaze, simply melt the chocolate together with the butter over a bain-marie. Once both are fully melted and combined into a smooth glaze, stir in 2 tablespoons of milk.

  5. Chill until set

    Drizzle the glaze over the bears straight away and let it set - the fridge works perfectly for this.

  6. You're done!
