We start by making a yeasted potato dough, which needs plenty of time to rise. While it proves, we prepare a delicious filling of wild garlic and cheddar, spread it over the dough, roll it up, then arrange the torn-off rolls in a baking tin and bake until golden.

    Boil the potatoes

    Peel the potatoes, cut into small pieces and boil in unsalted water until completely soft. Once cooked, save 100 ml of the hot potato water and drain the rest.

    Let it cool

    Let the potatoes cool slightly, then blend or mash until smooth. Let the potato water cool a little too, until it's only as warm as milk you'd use to activate yeast — just lukewarm.

    Make the yeast starter

    Add the sugar to the lukewarm water and crumble in the yeast. Once bubbles form on the surface, the starter is ready.
