Traditional Easter Bread Pudding with Wild Garlic

Step-by-step method

Let’s cook

At a glance

You're building a hearty springtime bread pudding by combining crispy bread, smoked pork, and fresh wild garlic with nettles for that traditional Easter twist. The trickiest part is managing the egg whites—you'll whip them separately and gently fold them in at the very end to keep the pudding light and fluffy. Once you've mixed everything together, it bakes for about 30 to 40 minutes until golden.

About this recipe

I never seem to make this bread pudding the same way twice — I get bored too easily for that. But I always keep a few traditional ingredients: eggs, smoked meat, and "something green." The more green, the better. Like me, use typical spring herbs straight from the meadow — young nettles and wild garlic. Perfection!
