At a glance
You're making a wonderfully juicy cherry cake by whisking eggs and cream into a light batter, then carefully folding in whipped egg whites to keep everything airy. The tricky part is gently folding the whites without deflating them, and the cherries will sink into the batter as it bakes to golden perfection over about an hour.
