Sesame-Crusted Salmon with Fragrant Coriander

Step-by-step method

Let’s cook

At a glance

This quick Asian-inspired dish comes together in just over half an hour—you're stir-frying vegetables with aromatic sauces while the rice cooks, then searing salmon chunks and rolling them in sesame seeds for a satisfying crust. The tricky part is balancing the salty sauces (soy, oyster, and fish sauce) to your taste, but keeping everything moving means the vegetables stay crunchy and the whole meal feels fresh and exotic.

  1. 1/7

    Stir-fry the vegetables

Get two large pans ready. Cut the vegetables into thin strips. Add them to a pan with hot sunflower oil and stir-fry. Cook the rice according to the packet instructions.

    Add the sauces

Pour in the sauces - soy, oyster and fish sauce. Add a little of each, going easy on the oyster and fish sauce at first as they're very salty. Adjust the seasoning to your taste.

Add a touch of chilli and a splash of water

If you like it spicier, add a bit of sriracha chilli sauce. Pour in about a decilitre of water and let it bubble for a moment.

About this recipe

As has become my habit lately, there's no time for complicated recipes. Besides, Asian cooking is usually not about long, laborious cooking anyway. Since I had salmon and coriander at home and a craving for something exotic, I got straight to cooking. What's more, a brut nature sparkling wine is, according to the label, a great match as an aperitif, with chicken, and with Asian food.
