    Add the roughly chopped shallot and chilli peppers to the pan. Cook together until the shallot softens. Return the chicken to the pan and sauté everything together for a little longer.

    Squeeze in the juice of half a lime, then add the grated ginger and half of the cilantro. Stir well and pour in the coconut milk. Let everything simmer together under a lid for about ten minutes.
