At a glance
You're blending vanilla pods with granulated sugar to create an incredibly fragrant vanilla sugar that beats any store-bought version — the sugar crystals grind the pods down beautifully while capturing dozens of aroma compounds. The key step is letting the finished sugar dry completely before jarring it up, which keeps it from clumping, and then you get to keep adding spent pods from your other baking to keep it scented for months.

Chop the pods
Cut the vanilla pods into pieces about 1 cm long, seeds and all. Short pieces break down in the blender much more easily than a whole pod.

Blend with granulated sugar
Put the chopped pods in a blender with 100 g of granulated sugar and blend for 2 to 3 minutes, until you have a dark, fragrant powder. The sugar crystals grind the pod down as it blends.

Sift and re-grind the rest
Sift the mixture through a fine sieve. Blend whatever is left in the sieve once more and sift again. Don't throw away the coarser leftovers.
