Homemade Vanilla Sugar from Vanilla Pods

·
4 servings
  1. Chop the pods

Cut the vanilla pods into pieces about 1 cm long, seeds and all. Short pieces break down in the blender much more easily than a whole pod.

  2. Blend with granulated sugar

Put the chopped pods in a blender with 100 g of granulated sugar and blend for 2 to 3 minutes, until you have a dark, fragrant powder. The sugar crystals grind the pod down as it blends.

  3. Sift and re-grind the rest

Sift the mixture through a fine sieve. Blend whatever is left in the sieve once more and sift again. Don't throw away the coarser leftovers.

  4. Add the remaining sugar

Mix the sifted mixture with the rest of the sugar and stir until the color is even.

  5. Let it dry before sealing

Spread the sugar on a baking sheet and leave it out in the open air for a few hours. The pod brought moisture into the sugar, and without this step it will clump into a block in a closed jar.

  6. Store and keep topping up

Transfer to a jar with a tight-fitting lid and add the coarser leftovers from the sieve as well. After that, just keep adding spent pods left over from other baking — they'll keep on scenting the sugar.

  7. Grind it fine for shortbread cookies

If you want to use this sugar in Linzer cookie dough, grind it into a fine powder first. The crystals won't dissolve in a dough with very little liquid, and the baked cookies would turn out speckled.

  8. You're done!
