Homemade Almond Butter Cookies
·Mix the dry ingredients
Combine the flour with a pinch of salt and the baking powder. Stir in the sugar and ground almonds.
Add the butter and egg
Add the softened butter and egg to the dry ingredients. Work everything into a soft dough that shouldn't be sticky. Wrap the finished dough in plastic film.
Let it rest
Leave the wrapped dough to rest and firm up in the fridge for an hour.
Roll out and cut the shapes
Dust your work surface with a little flour and roll the dough out into a sheet about 0.5 cm thick. Cut out shapes from the sheet, or decorate with a cookie stamp.
Bake
Arrange the cut-out cookies on a baking sheet lined with parchment paper and bake in an oven preheated to 190°C for about 10 to 11 minutes. Keep an eye on your own oven — the cookies should turn just lightly golden, not fully browned.
