Homemade Almond Cookies

Step-by-step method

Let’s cook

At a glance

You're looking at a straightforward cookie project that takes about an hour and a half from start to finish, mostly waiting time for chilling and baking. The main things you'll be doing are mixing a simple dough, letting it rest in the fridge, rolling and cutting out shapes, then baking until golden. The biggest time commitment is the chill time, but that's perfect for getting other things done or bringing the kids in to help with the fun cutting-out part.

  1. 1/3

Mix the dough and chill it

Mix all the ingredients together and chill the dough in the fridge for an hour. You might need a bit more flour if the dough feels sticky β€” that's just because eggs vary in size.

  2. 2/3

    Cut out the cookies

Roll out the dough to a thickness of about 4 mm and cut out the cookies. I used cookie stamps for mine. Bake on a baking sheet lined with parchment paper, in an oven preheated to 170 Β°C, fan setting.

  3. 3/3

    Cool on a wire rack

Bake until golden, about 15 to 20 minutes. Leave to cool on a wire rack.

About this recipe

If I had aaaaall the free time in the world, I'd be baking cookies non-stop. Okay, I'm exaggerating a bit. I probably wouldn't bake them constantly, and besides, you don't actually need loads of free time to make cookies β€” just a little bit longer than usual. Or get the kids involved, if yours are old enough and keen to help out in the kitchen.
