    Tip:

    The cake is tall but not very wide, so use wooden cake dowels to support it. I also didn't bake the sponge in a cake tin – instead I used two pots with a 17 cm diameter and one with a 19 cm diameter.

    Weigh your eggs

    Weigh your eggs in their shells. Mine came to 480 g – yours will probably come out a bit different. Whatever number you get, prepare that same amount of sugar in grams.

    Weigh out your ingredients in advance

    I use fine baking sugar, but caster sugar works just as well. Also prepare some fine plain flour – weigh out 50 g less than your eggs weighed in their shells. In place of that 50 g of flour, weigh out 50 g of good-quality cocoa powder instead, and mix it into the flour in a bowl.

About this recipe

Our little Pepino is turning 17 (unbelievable! My baby!) and he loves chocolate. He's already learned to recognise the good stuff, so there's no way you'd fob him off with some cheap chocolate Santa from the supermarket. So I set out to bake with Willie's Cacao chocolate.
