    Melt the lard in a pot and fry the finely chopped onion. Once it turns translucent, add the mushrooms, cut into pieces.

    Season with salt, pepper, and caraway seeds. Stir and cook over low heat. The mushrooms will release a bit of water, so keep an eye on them. If they aren't sticking to the pot, you don't need to add water at first.

This is how I make mine, several times each season. How do you like your mushroom sauce? With potatoes and a hard-boiled egg, like we do, or with dumplings, a piece of beef, or pasta? Everyone has their own way, with their favourite combinations and flavours. Mushroom sauce is also delicious with bacon dumplings or a piece of fresh, crusty baguette.
