Alpine Specialty: Kaiserschmarrn – the Emperor's Shredded Pancake

Step-by-step method

Let’s cook

At a glance

You're making a thick, fluffy Austrian pancake that you'll tear into pieces and toss with warm spiced apples and nuts. The main trick is keeping a close eye on the caramelizing sugar so it stays golden rather than burning, and you've got about 30 minutes total to whip up this elegant, impressive dessert.

  1. 1/9

    Make the batter

Get out a large bowl. Pour in the milk and eggs and whisk them together. Add the sugar, flour and a pinch of salt. If you like, you can also stir in a little grated lemon or orange zest.

  2. 2/9

Mix in the baking powder well

Once your batter is mixed, sprinkle in the baking powder and stir thoroughly again. A whisk works best for this the whole time.

  3. Melt the butter

    3/9

    Melt the butter

Heat some clarified butter or a little oil in a large pan. Pour in the batter. Wait about a minute, then add rum-soaked raisins if you'd like them in your kaiserschmarrn. We left them out.

About this recipe

I first tasted Austrian kaiserschmarrn – the emperor's shredded pancake – at a wonderful little place near Bad Gastein. Kaiserschmarrn is a bit like a really thick pancake that, once cooked, gets torn into pieces and finished off with jam, stewed apples or fresh fruit, plus a dusting of sugar. Feel free to top it with a dollop of whipped cream or sour cream too. I tried Roman Paulus's recipe and tweaked it just a little.
