Oyster Mushroom Sandwich with BBQ Sauce, Avocado and Wasabi

Step-by-step method

Let’s cook

At a glance

You're building a flavor powerhouse here with crispy oyster mushrooms coated in homemade BBQ sauce, layered with a spicy wasabi-avocado spread and fresh greens. The main time commitment is reducing the BBQ sauce (about 10-15 minutes), but everything else comes together quickly to create one seriously craveable vegan sandwich.

  1. 1/5

    Fry the torn oyster mushrooms

Tear the oyster mushrooms into thin strips and fry them in a pan until golden and crispy. You can use tamari or shoyu sauce.

    Sauce

Mix the BBQ sauce ingredients thoroughly and bring to a boil in a saucepan. You can use Worcestershire sauce instead of tamari. Let the sauce reduce for about 10-15 minutes, then pour it over the cooked mushrooms and stir well to combine.

  3. 3/5

About this recipe

This sandwich takes a bit more effort, but honestly, friends, if I had to eat just one sandwich for the rest of my life, this would probably be it. Okay, I know my oyster mushroom obsession is getting a little out of hand, but I just can't help myself. It's such a fantastic ingredient that you can prepare in so many different ways. Plus, we could all use a boost to our immune system, and oyster mushrooms are perfect for that.
