    Mix the ingredients

    Mix all the dry ingredients together, add the water and stir until combined. Cover with plastic wrap and leave to rise for 12–18 hours.

    Shape the loaf

    Turn the dough out of the bowl onto a floured surface and fold the edges over a few times. Dust with flour and let it rest for a moment. Then shape it into a loaf and leave to rise for another hour. Preheat the oven to 200°C, placing a cast-iron pot inside to heat up as well.

    Bake

    Transfer the loaf into the hot pot, cover with the lid and bake for 30 minutes. Then remove the lid and bake for a further 20 minutes.

About this recipe

This is one of the oldest recipes on our blog — the very one you've just opened. Somehow a little gremlin tucked it away somewhere, and it never even occurred to us to go looking for it. It must have gotten lost when we redesigned the site. Either way, this is one of the best loaves Lenka ever posted on her blog. It was a huge hit back then, so we're bringing it here too.
