    Get a springform cake tin ready and line the sides with a strip of baking paper. Then layer up your prepared ingredients.

    Layer it up

    Start with a layer of sponge fingers at the bottom of the tin, then a layer of cream, a layer of fruit, another layer of cream, a layer of sponge fingers, cream again, and finish with a layer of fruit. Leave in the fridge overnight to set.

About this recipe

No-bake fruit cakes are a hit every summer. I recently shared a recipe for a no-bake cake made with soured cream, and this time I've given it an extra boost with a wonderfully flavoured curd cheese from Madeta. It's gone down a real treat at home, because it's genuinely delicious. So far I've only tried the vanilla one, but I'll keep an eye out for other flavours in the shops too.
