No-Churn Vanilla Ice Cream with Peanut Butter Swirl

Step-by-step method

Let’s cook

At a glance

You're getting homemade ice cream without an ice cream maker, with creamy vanilla and a striking peanut butter swirl running through every scoop. The main trick is whisking a mascarpone base just right so it stays silky, then layering and swirling in the peanut butter mixture before a long freeze (at least 6 hours, but overnight is ideal) to get those perfect scoops.

  1. 1/6

    Make the peanut butter swirl

In a bowl, combine the peanut butter, cream, invert sugar and salt. Warm the mixture gently in a water bath or for 15 seconds in the microwave. Whisk until you have a smooth, glossy emulsion. Set aside and let it cool completely to room temperature.

  2. 2/6

Whip up the ice cream base

In a large bowl, mix the mascarpone with the invert sugar, icing sugar and vanilla. Whisk for 30 seconds on low speed. Pour in the ice-cold cream and increase the speed. Whisk until you get a thick, firm cream. Careful – as soon as it thickens, stop whisking so it doesn't curdle.

    Prepare the mould

Get a rectangular mould ready (such as a loaf tin lined with baking paper) or a freezer-safe glass container.
