    In a little oil and butter, sauté finely chopped shallot together with minced garlic.

    Once the shallot turns golden, pour in the white wine and let it boil hard until it reduces by about half, losing that sharp, tangy edge in the process. Add the tomatoes, cut in half, as well.

About this recipe

Whenever my friend Henry comes over from Prague, he always brings along a bag (sometimes two) of fresh mussels. Along with that, about four kilos of shrimp and a heap of oysters. It's become a bit of a ritual by now. He says I make the best mussels and shrimp around, and he always looks forward to them.
