    Using an electric whisk, beat the eggs with the sugar and a pinch of salt until you get a smooth, pale yellow foam. Add the lemon zest and the plain flour, which you've already mixed with baking powder in a bowl.

    While mixing the batter, melt the butter on the stove and add it to the batter as well.

About this recipe

I tried this recipe from Dagmar Derré, who is also where I bought the mould. It includes orange blossom water, which has a distinctive aroma. Some recipes leave it out, so feel free to try it without. In other versions, only half the amount of sugar is used, with lavender honey making up the other half - a wonderful idea.
