Mac and Cheese - American Cheesy Pasta

Step-by-step method

Let’s cook

At a glance

You're making a creamy, baked mac and cheese that starts on the stovetop and finishes in the oven. The key trick is cooking your pasta just slightly undercooked so it won't turn mushy during baking. You'll mix everything together with butter, mascarpone, and melted cheese before transferring to the oven for a golden, bubbly finish.

  1. 1/7

    Preheat the oven

Preheat the oven to 200 °C.

  2. 2/7

    Cook the pasta

Cook the pasta in salted water, but don't let it get fully soft as you normally would - drain it about two minutes early so it's still slightly firm. It will finish cooking in the oven.

About this recipe

I love cheesy dishes. I love pasta. Mac & cheese is a classic American recipe. The original recipe calls for "macaroni" pasta, which isn't the hollow, tube-shaped "makaróny" you might be thinking of, nor spaghetti, but elbow macaroni. That shape works best for this dish. I didn't have any elbow macaroni at home, so I used lovely pasta spirals instead, which unfurled nicely while cooking in the water. It turned out great!
