Boil the potatoes briefly, slice them, then layer them in a baking dish with the frankfurters – or just mix everything together if you don't feel like layering. Pour over a mixture of eggs, cream and seasoning, add cheese if you like, then simply pop it in the oven for about 20 minutes until it's baked to a beautiful golden finish.

    Boil and slice the potatoes

    Scrub the potatoes well and boil them in salted water until almost tender. Drain and slice. Cut the frankfurters into rounds.

    Layer the potatoes and frankfurters

    Grease a large baking dish with a little oil or butter and dust with breadcrumbs. Arrange layers of potato slices and frankfurter rounds inside. If you really can't be bothered layering, just toss both ingredients together and tip them straight into the dish – that works too.

    Make the egg mixture

    Whisk the eggs with the cream and season with salt, pepper and mustard. You can either stir finely grated cheese into this mixture or simply sprinkle it over the potatoes – whichever you prefer.

About this recipe

Some call it "French-style" potatoes, others simply "scalloped" – either way, this easy traditional recipe couldn't be simpler to make. It works best with really good early potatoes, boiled in their skins. For the "meaty" part you can use smoked meat, sausage, or kabanos – I went with our favourite Lidl frankfurters.
