Classic Scalloped Potatoes
·Scrub the potatoes well and boil them in salted water until almost tender. Drain and slice. Cut the frankfurters into rounds.
Grease a large baking dish with a little oil or butter and dust with breadcrumbs. Arrange layers of potato slices and frankfurter rounds inside. If you really can't be bothered layering, just toss both ingredients together and tip them straight into the dish – that works too.
Whisk the eggs with the cream and season with salt, pepper and mustard. You can either stir finely grated cheese into this mixture or simply sprinkle it over the potatoes – whichever you prefer.
Bake in an oven preheated to 180°C for about 20 minutes. The potatoes are done once the egg-and-cream mixture has set and the cheese on top has turned golden.
