Grilled Chicken Hearts with Mushrooms

Step-by-step method

Let’s cook

At a glance

You're getting an exotic grilled dish with chicken hearts and mushrooms that comes together quickly on the grill but needs overnight marinating for those bold, spicy-sweet flavors to develop. The main time commitment is the prep work—rinsing the hearts, threading skewers, and whisking up a ginger-soy-sriracha marinade—followed by a quick 15-minute grill session the next day.

  1. 1/5

    Ingredients

Rinse all the chicken hearts and trim off any excess fat. Clean the mushrooms – if you like, you can peel them too. Get your bamboo skewers ready and soak them in water for about an hour beforehand, so they don't burn on the grill.

  2. 2/5

    Skewers

Thread the chicken hearts onto the bamboo skewers, alternating with the mushrooms. You can also make a few skewers with just hearts.

  3. 3/5

    Marinade

Peel the ginger and grate it finely. Mix it with the oyster sauce, soy sauce, lime juice, oil, sugar and a splash of sriracha chilli sauce.

About this recipe

For my next recipe made for the pe-po grill zone, I knew exactly what I wanted. I wanted to grill chicken hearts. And do it with a real exotic twist. The kids weren't too thrilled about the hearts, but my husband was over the moon – he absolutely loves chicken hearts (and so do I). This recipe is simple and super quick.
