Golden Fried Doughnuts with Jam

Step-by-step method

Let’s cook

At a glance

You'll need about 90 minutes total to make these irresistible golden fried doughnuts, with the trickiest part being managing the yeast starter and two rise times to get that perfect fluffy texture. Once your dough is ready, cutting and frying goes quickly, and then comes the best part—filling them with jam or vanilla custard.

  1. 1/7

    Make the yeast starter

Warm the milk gently in a saucepan until lukewarm. Stir in the sugar and flour, then crumble in the yeast and mix well. Leave in a warm spot until bubbles start forming on the surface - that's your sign the starter is ready.

  3. Work up the dough

    3/7

    Work up the dough

Add the rum, lemon juice, a pinch of salt, sugar, and the melted butter (slightly cooled). Work the mixture into a smooth dough and leave it to rise in a warm place.

About this recipe

You won't believe it, but I avoided frying homemade doughnuts for years. It seemed like way too much hassle, and I had plenty of other excuses too. I just never felt like tackling it. But last year I fell in love with a recipe from my friend Janička. I tried making doughnuts her way, and now I won't make them any other way. Ever! At our house they disappeared in no time, so now I have to fry another batch.
