In the evening, prep the vegetables and noodles, layer them in a jar with the seasoning, and store in the fridge. The next day, simply pour boiling water over the soup, give it a quick shake, and after 10 minutes a fast, light lunch is ready — no cooking required.

    Prep the vegetables

    Clean the vegetables. Grate the carrot on a coarse grater and half of the parsley root on a fine grater. Chop the onion and celery stalk into small pieces. Break the noodles into smaller pieces.

    Put all the vegetables and noodles into the jar, season with salt and pepper, and add soup seasoning. Avoid using bouillon-type seasoning mixes or similar chemical-laden flavor enhancers.

    Store the jar in the fridge (don't forget it at home!). When you're ready for lunch at work, fill the jar to the top with boiling water. Close the lid, give it a gentle shake, and let it sit for 10 minutes.
