The whole dish takes about an hour, with most of that time being hands-off cooking, and you'll finish by crisping the fish skin under the grill for a golden touch.

    For the fish, we simply chopped up all the vegetables we had in the fridge - tomatoes, peppers, one chilli pepper, and a zucchini. I'd happily have added eggplant too, but didn't have any on hand.

    Season and transfer to the roasting dish

    Tip the vegetables into a roasting dish. Drizzle with olive oil, season with salt and pepper, and toss together.

    Roast

    Rinse and pat the fish dry, then brush with pesto, or simply season with salt and pepper. Lay it on top of the vegetables and place in the oven. I used my Electrolux steam oven on the steam-baking setting, roasting at 90°C for about 45 minutes.

About this recipe

You don't even need to go overboard with seasoning. If you like, add a sprig of rosemary or thyme, but really, salt, pepper and olive oil are enough. This time my husband put a bit of wild garlic pesto inside the fish and brushed some over the skin too. It was fantastic!
