At a glance
This dish brings together pan-seared salmon and shrimp with tender radicchio and leek in a creamy sauce, all coming together in about 22 minutes. The main trick is searing the salmon pieces just right so they stay tender while the vegetables soften alongside—then everything comes together at the end with a quick simmer in cream. Serve it all over gnocchi for a restaurant-quality meal that feels way easier than it tastes.

Cube the salmon
Get out some butter or ghee, whichever you prefer, and melt it in a large frying pan. If you like, you can remove the skin from the salmon, though it's not essential. Cut it into cubes.

Season and sear
Season the salmon simply with salt and white pepper, then sear it. Once the pieces have turned from dark pink to pale (i.e. cooked through on the outside), take them out of the pan and set aside on a plate.

Add the leek and radicchio
Into the same pan, add the leek sliced into rounds (the whole white part plus a good length of the green) and the radicchio cut into pieces. Cook together for about eight minutes.
