    Prepare the potatoes and carrots

    Wash and dry small potatoes and place them on a baking tray. Drizzle with oil, season with salt and red pepper, then roast at 200°C until tender. Do the same with the carrots, roasting them until soft as well.

About this recipe

Roasted carrots straight from the garden, potatoes, and a piece of good fish cooked in butter? A fresh lunch you can make any day of the week. I still have some carrots left over from the garden, but this recipe used up the very last of them. They turned out great, so next year I'm growing them again! I'm even thinking of ordering some wildflower seeds now – I can't wait to get back out in the garden.
