At a glance

First, the cream is warmed with vanilla and sugar, then the softened gelatine is stirred in once it's off the heat. The mixture is poured into moulds and left to chill in the fridge for several hours, ideally overnight, before being turned out and simply decorated with fruit.

    Add the vanilla pod and sugar to the cream

    Pour the cream into a saucepan. Slice the vanilla pod lengthways, scrape out the seeds, and add them to the cream along with the sugar.

    Add the gelatine

    Soak the gelatine sheets in cold water until softened. Bring the cream to the boil, turn off the heat, then stir in the gelatine. Once it's added, the cream must not boil again!

    Pour into moulds and chill

    Pour the mixture into prepared glasses, bowls or moulds of your choice. Chill in the fridge for at least 4 hours, ideally overnight.
