    I like to buy resealable freezer bags and pour the marinade and meat straight into them. I keep the turkey in the bag in the fridge, turning and gently massaging it every so often so the marinade soaks in nicely.

    Marinade

    Feel free to marinate the meat in a bowl instead. Mix together finely chopped shallot, oil, mustard, honey, salt and pepper to make a delicious marinade. Coat the meat all over, then place it in a container or bag and leave it to marinate overnight.

    The next day, preheat the oven to 150 °C. Place the turkey breast in a roasting dish with a lid, add just a splash of liquid (about 50 ml, just enough to cover the bottom) and roast for about 2.5 to 3 hours.
