At a glance
This watermelon syrup is made from just two ingredients and requires minimal effort—you're mainly waiting for the cold maceration to work its magic. The sugar draws out the watermelon's juice over 8 to 24 hours in the fridge, then you blend and strain it into a gorgeous, clear syrup that transforms plain water into an elegant summer drink.

Prep the watermelon with sugar
Cut the peeled watermelon into small cubes. In a bowl, mix it thoroughly with granulated sugar so that every piece is nicely coated.

Macerate in the fridge
Cover the bowl well and let it rest in the fridge for 8 to 24 hours. During this time, the sugar will gradually draw out all of the watermelon's delicious juice.

Blend and strain the mixture
Once it's rested, blend the whole mixture smooth with a stick blender or in a blender. Strain the blended mixture through a very fine sieve or a clean piece of cheesecloth. This gives you a beautifully clear, smooth syrup with no solid bits at all.
