Cold-Steeped Watermelon Syrup
·Prep the watermelon with sugar
Cut the peeled watermelon into small cubes. In a bowl, mix it thoroughly with granulated sugar so that every piece is nicely coated.
Macerate in the fridge
Cover the bowl well and let it rest in the fridge for 8 to 24 hours. During this time, the sugar will gradually draw out all of the watermelon's delicious juice.
Blend and strain the mixture
Once it's rested, blend the whole mixture smooth with a stick blender or in a blender. Strain the blended mixture through a very fine sieve or a clean piece of cheesecloth. This gives you a beautifully clear, smooth syrup with no solid bits at all.
Storage and lemonade tip
Pour the finished syrup into a clean, sealable bottle and store it in the fridge for about 3–5 days. For the best lemonade, mix it with sparkling water, ice and a splash of fresh lime juice.
