At a glance
You're making a vibrant, homemade watermelon syrup with just two ingredients—watermelon and sugar—using a simple cold maceration method. The magic happens in the fridge over 8–24 hours as the sugar draws out the juice, then you blend and strain to get a beautifully clear syrup that's perfect for mixing into refreshing summer drinks.
1/4
Prepare the watermelon with sugar
Cut the cleaned watermelon into small cubes. In a bowl, mix it thoroughly with granulated sugar so that every piece is nicely coated.

Macerate in the fridge
Cover the bowl carefully and let it rest in the fridge for 8 to 24 hours. During this time, the sugar will gradually draw out all the delicious juice from the watermelon.

Blend and strain the mixture
Once it's had time to rest, blend the whole mixture until smooth with a hand blender or in a blender. Strain the blended mixture through a very fine sieve or a clean cheesecloth. This gives you a beautifully clear, smooth syrup with no solid bits.
