Cold-Pressed Watermelon Syrup
·Cut the cleaned watermelon into small cubes. In a bowl, mix it thoroughly with granulated sugar so that every piece is nicely coated.
Cover the bowl carefully and let it rest in the fridge for 8 to 24 hours. During this time, the sugar will gradually draw out all the delicious juice from the watermelon.
Once it's had time to rest, blend the whole mixture until smooth with a hand blender or in a blender. Strain the blended mixture through a very fine sieve or a clean cheesecloth. This gives you a beautifully clear, smooth syrup with no solid bits.
Pour the finished syrup into a clean, sealable bottle and store it in the fridge for about 3–5 days. For the best lemonade, mix it with sparkling water, ice, and a splash of fresh lime.
