The main work involves boiling and slicing potatoes, layering them with sausage, and pouring a creamy egg mixture over everything before baking until golden – you can even skip the layering and just toss everything together if you're short on time.

    Boil and slice the potatoes

    Wash the potatoes well and boil them in salted water until almost tender. Drain and slice them. Cut the frankfurters into rounds.

    Layer the potatoes and sausage

    Grease a large baking dish with a little oil or butter and dust it with breadcrumbs. Arrange layers of potato slices and sausage rounds inside. If you really can't be bothered layering, you can simply toss both ingredients together and tip them straight into the dish – that works just fine too.

    Make the egg mixture

    Whisk the eggs together with the cream, then season with salt, pepper and mustard. You can stir finely grated cheese straight into this mixture, or simply sprinkle it over the potatoes instead – whichever you prefer.

About this recipe

Some call them "French potatoes," others simply "scalloped potatoes." It's an easy, traditional recipe with very little fuss involved – especially if you've got really good early potatoes, which you cook right in their skins. For the "meaty" part, you can use smoked meat, sausage, or kabanos. I used our favourite Lidl frankfurters.
