Baked Curd Cheese Dessert with Forest Fruit

Step-by-step method

Let’s cook

At a glance

You're whipping together a dreamy curd cheese and cream mixture that takes about ten minutes to get fluffy and light, then spooning it into ramekins with forest berries on top and baking for roughly 45 minutes until set. The result is a cloud-like, tangy-sweet dessert that's naturally gluten-free and came about from happy kitchen accident—what could be better?

Whip up the curd cheese mixture

Whip together the curd cheese, cream, eggs, sugar, and vanilla seeds (scraped from a pod, or use vanilla powder or extract). Beat for about ten minutes until everything combines into a beautifully light, fluffy mixture.

About this recipe

A dessert as light as a cloud, made from whipped curd cheese and cream. A slightly tangy taste of forest fruit and the scent of vanilla. Who would believe this dessert actually came about by accident? I was baking a curd cheese cake with raspberries and had some filling left over. So what to do with it? I got out some baking ramekins and baked the leftover cream on its own, without any dough, just with fruit on top.
