Bacon and Bean Stew in Tomato Sauce

Step-by-step method

Let’s cook

At a glance

This hearty bacon and bean stew comes together in about 8 hours total, but most of that is hands-off cooking time. The main time commitment is soaking the beans overnight (at least 12 hours), after which you'll sauté bacon and vegetables, then simmer everything together with tomato sauce for a satisfying, high-protein meal.

  1. 1/4

    Soak the beans

Soak the beans in water overnight. The next day, drain the water, rinse the beans, and cover with fresh water. Cook the beans until tender. Don't add salt! Season with salt only after cooking.

    Prepare the base

Heat a little oil in a pot and fry the onion together with diced bacon for about 3 minutes. Then add the carrot, sliced into rounds.

About this recipe

I love cooking with legumes. They're tasty, healthy, and dishes made from them usually come together pretty quickly. The one thing that takes time is that most legumes need to be soaked in water the day before. Ideally, rinse the beans the evening before, cover them with cold water, and let them sit on the counter for at least 12 hours. After that, drain the water, rinse the beans, and cook them.
