    Poach the egg

    Get a small bowl ready. Line it with a piece of cling film, pressing it snugly into the bowl. Crack the egg into it, then tie the film with kitchen string so it's pulled tight with no air pockets left inside. Tie it securely so the egg doesn't leak out.

    Poach briefly

    Bring a pot of water to the boil, then lower the egg parcel in. Turn the heat down just slightly, but keep the water gently bubbling. Cook for exactly 4 minutes, and you're done.

    Prepare the bread, cheese and avocado

    While the egg is cooking, you'll have just enough time to cut a slice of bread and spread it with cheese. Halve the avocado, remove the stone, peel it, and slice it up. Lay the slices on the cheese-topped bread, leaving a spot for the egg.

About this recipe

We're a breakfast-loving family. I can't help but feel proud that our teenagers — seventeen-year-old Pepino and thirteen-year-old Tony — sit down and have breakfast with us. And they actually enjoy it. Really. My husband and I usually put together a nice breakfast even on weekdays, and our beloved avocado tends to make an appearance pretty often.
