First you make a yeasted dough and let it rest somewhere warm for about an hour, while a fragrant garlic and wild garlic filling comes together. The dough is then rolled out, spread with the filling, rolled up into logs, sliced into triangles, brushed with egg and baked until golden for about half an hour.

    Make the dough

    Mix the lukewarm milk, sugar and yeast together and leave it somewhere warm until bubbles start forming on the surface. Melt the butter. Put all the ingredients, including the yeast mixture, into the bowl of a stand mixer and knead into a smooth, non-sticky dough. Leave it to rise somewhere warm for an hour.

    Garlic filling

    Melt the butter spread and stir in the salt and pressed garlic (12 cloves if you're not using wild garlic). Finely chop the wild garlic.

    Roll out rectangles

    Turn the dough out onto a lightly floured surface and divide it into four equal pieces. Roll each piece out into a rectangle.

About this recipe

Whenever the girls are figuring out what to bake or cook for a girls' get-together, at least one of us has to bring "triangles". Once wild garlic season is over, swap the fresh leaves for wild garlic pesto, or use pressed regular garlic instead (just remember to remove the green sprout from the centre of each clove). There's a generous amount of garlic in this recipe, so if you go overboard and eat too many pieces at once, your stomach might not thank you.
