Traditional Easter Bread Stuffing with Wild Garlic

Step-by-step method

Let’s cook

At a glance

You're looking at a springtime stuffing that comes together by combining cubed stale bread, smoked pork, and a vibrant mix of wild garlic and nettles with a creamy egg base. The process involves frying the bread cubes until crispy, preparing an egg yolk mixture with butter and cream, cooking peas with onion, then gently folding in whipped egg whites before baking. The main time commitment is letting the bread dry and the 30–40 minute bake, though the actual hands-on preparation moves along fairly quickly.

About this recipe

I don't think I've made this stuffing the same way two years running. I just get bored of it. But I do keep a few traditional ingredients constant - eggs, smoked meat and "something green". The more green, the better. Like me, use typical spring herbs straight from the meadow - young nettles and wild garlic. Perfection!
