A perfect meal you can whip up quickly, even using leftover rice. Spicy or mild – it's up to you. The vegetables I used are just a suggestion; feel free to swap them. I had leek, carrot, celery stalk and spring onion on hand. You can also add fresh herbs – coriander or parsley. And most importantly – fresh chilli peppers.
