    Season the meat

    Season the rabbit, or rabbit legs, with salt and pepper on all sides and inside as well. Feel free to season to your own taste.

    Prepare the shallots and garlic

    Peel the shallots and cut them in half. Leave the garlic unpeeled, just remove any dry, papery outer layers.

    Into the roasting dish

    Place the rabbit in a roasting dish, arrange the shallots and unpeeled garlic cloves around it, and sprinkle over the thyme. Pour in about 150 ml of water and cover with a lid.

That famous comedy sketch about "sun, hay..." — you know the one — always brings rabbit to mind! After the revolution this wonderful meat rather fell out of fashion, but thankfully it's back in favour these days. Rabbit is definitely one of our favourite treats. Of course, it all depends on how you cook it. It's fantastic with cream, root vegetables, or with garlic. Today we roasted ours with lovely shallots and garlic, and rounded it off with crispy mushrooms. Honestly, I could eat rabbit prepared any which way. How do you like to cook yours?
